- 3 1/2 Cups of unbleached AP Flour
- 1 1/2 tsp Baking Powder
- 1/4 tsp Baking Soda
- 3/4 tsp Salt
- 2/3 Cup Unsalted Butter
- 1 1/2 Cups of Brown Sugar (packed)
- 2 Large Eggs
- 2 Tsp Vanilla
- 3 1/2 Cups of Blueberries (Fresh)
- 1 1/4 cups of Buttermilk
Cream butter and brown sugar for 2 minutes in a mixer.
Sift the dry ingredients together.
Mix in eggs 1 at a time (into butter and sugar)
add 1/3 of the dry ingredients, then 1/3 of the milk, and so on until it is just blended in.
Add blueberries until they are evenly distributed only.
Grease the muffin pans, or use the papers.
Preheat to 350 and bake for 40 minutes. Let rest for 15 minutes (blueberries are really hot when they come out you need to do this)
